- 1 dl hvidvin
- 1 l hønsebouillon
- 80 g parmesan
- g frossen hakket spinat
- 2 små buketter broccoli med stilk
- Dild
- g røget laks
Cheesy Sweet Potato Risotto for Kids
An easy, simple risotto for kids that packs a portion of sweet potato into the creamy cheesy sauce! This is an easy win for picky eaters, and also suitable for toddlers and babies. You can adapt this into a family meal with a few upgrades for the adults!
This risotto has become a regular dinner for my kids, who are, at 5 and 3, both in a zone where they like predictable, easy foods with consistent textures. For weeknight meals, this is the kind of thing that works, especially because it contains ingredients that I always have to hand, and there isnt any precise measurement required. Once youve made it once you dont need the recipe again. Its pretty easy to just wing it.
What makes this a recipe for kids?
In a nutshell, its the simplicity of the recipe that makes it kid friendly. This is very stripped back.
- The texture is pretty consistent. To some kids this is essential. Theres no onion or celery floating around we only use garlic as a background flavor. The sweet potato can be mixed until its all broken down and creamy without chunks, if you need it to be.

- Kosher salt and freshly ground black pepper
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine, such as Pinot Grigio
- 1/3 cup dried currants or raisins
- 2/3 cup (4 oz) crumbled feta cheese

1. Preheat the oven to °F. Arrange the pine nuts in a single layer on a baking sheet. Bake 6 to 8 minutes, until lightly toasted. Cool completely before using.
2. Heat the broth in a small saucepan and keep warm over low heat.
3. In a large saucepan or Dutch oven, heat the oil and 2 tablespoons of butter over medium heat. Add the shallots and 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 2 minutes, until softened. Add the rice and cook, stirring often, until toasted, about 3 minutes. Add the wine and simmer, stirring occasionally, until evaporated, about 2 minutes.
4. Add 1/2 cup of the hot broth and cook, stirring occasionally, until liquid is completely absorbed. Continue adding the remaining broth, 1/2 cup at a time, cooking and st
I never thought I would see the day when my kids would willingly devour a plate of al dente risotto. As a parent, getting them to eat anything beyond mac and cheese or chicken nuggets seemed like an impossible task. But recently, I decided to introduce them to this classic Italian dish, and it was like a culinary miracle. So, the question stands: do kids really eat risotto? The answer might surprise you.
What is risotto?
Definition of risotto
Risotto is a delicious and creamy Italian dish made with short-grain rice that has been cooked slowly in a flavorful broth until it reaches a rich and velvety consistency. The technique of making risotto involves adding liquid to the rice gradually, allowing it to absorb and release starch, resulting in a creamy texture that sets this dish apart from other rice dishes.
Traditional ingredients
The traditional ingredients in risotto include Arborio or Carnaroli rice, onions, garlic, butter, white wine, and Parmesan cheese. These basic ingredients form the foundation of risotto, providing a creamy and flavorful base upon which other ingredients can be added.
